We follow the harvest for this bar, blending standout cacaos into something smooth, deep, and satisfying. This season’s Classic Dark celebrates the soil and soul of two origins we love:

The first comes from Maya Mountain in Belize, where we traveled in March 2025 and stayed with regenerative farmer Eladio Pop during the harvest of this very batch. His farm is alive with cacao trees woven among fruit, hardwoods, native bushes, and abundant wildlife. At Maya Mountain, beans from the Pop family and other organic farmers in Southern Belize are expertly fermented and dried, coaxing out notes of honey, pineapple, raisin, and fudge — flavors as warm and layered as the surrounding landscapes.

The second is Öko Caribe in the Dominican Republic, a fermentary and farmer network known for quality beans, precise processing, and community focus. They’ve built a reputation for consistency, clean flavor, and strong farmer support over the years, and the taste of their cacao is classic and confident: chocolate fudge, almond butter, guava, with a bright tropical lift.

Both origins are certified organic and hand-sorted, with above fair trade pricing – making this bar ethical, high quality, and deeply delicious. Together, the blend creates a 72% dark that we're proud to share (and honestly can’t stop enjoying ourselves). Roasted, stone-ground for days, and tempered by us here in Bozeman, this chocolate is rich without heaviness, roasty and nutty with subtle fruit and a jammy finish that lingers.
