We build this bar on our Classic Dark 72% — our seasonal, house-favorite base that carries cocoa depth with a smooth, satisfying melt. Then we go wild with two ingredients that have made this bar a legend in our little circle.

The first comes from our neighborhood Co-Op’s bulk bins: organic candied ginger. Sweet at first, then that bright, buzzing spice — these chewy golden bits give the chocolate texture in every way.

Then comes the chai: Steep Mountain Tea’s Storm Castle Chai blend. We tested nearly a dozen of their incredible chai blends before choosing this one; it just SINGS in dark chocolate. Ground tea — rooibos, carob, clove, and natural vanilla — folds straight into the bar. Organic, caffeine-free, and named for a ridge that touches the sky, it’s bold, warming, and perfectly unruly.

We love hearing people say, “wait — what is this?! I’ve never had chocolate like this before!” when tasting it for the first time. And yes, it does have its own fan club (Lauren included). If you're not a fan of chai and ginger, this might not be the bar for you. But if you are… well, you might have just met your new favorite chocolate.
