WHAT WE’RE TASTING IN THIS BAR:
Chai spice · Candied ginger · Cardamom lift · Dark chocolate

We build this bar on our Classic Dark 72% — our seasonal, house-favorite chocolate that carries cocoa depth with a smooth, satisfying melt. Then we go wild with two ingredients that have made this bar a legend in our little circle.

The first: organic candied ginger. Sweet at first, then that bright, buzzing spice — these chewy golden bits give the chocolate texture in every way.

Then comes the chai: a custom blend from Bozeman's own Steep Mountain Tea, mixed specially for us by Scott, their longtime and very excellent “Leaf Manager.” We fresh-grind the tea – rooibos, carob, clove, black pepper, and natural vanilla – then add green cardamom from Frontier Co-op for a bright, aromatic lift. 

We've long loved cardamom but got even more attached to the spice after traveling in Guatemala, where we were generously hosted by FEDECOVERA and got to spend time in the landscapes where it’s grown. 

In this bar, all of that gets folded together: chai spice, bright cardamom, chewy ginger, cocoa depth, and a hint of kicky warmth at the finish. It’s bold, bright, fragrant, and perfectly unruly.

We love hearing people say, “wait — what is this?! I’ve never had chocolate like this before!” when tasting it for the first time. And yes, it does have its own fan club (Lauren included). If you're not a fan of chai and ginger, this might not be the bar for you. But if you are… well, you might have just met your new favorite chocolate.
