Ingredients: Cacao and organic cane sugar
The cacao used in this 72% dark chocolate comes from the Asociación de Mujeres Emprendedoras Warmi Tsinani, a cooperative of 14 women farmers founded in 2010. These women grow cacao at an unusually high 1,800–2,700 feet, alongside coffee, corn, ginger, tapioca, and banana — economic and ecological diversity that sustains both land and livelihoods. After harvest, the beans ferment for six days in Tornillo wood boxes, then dry for seven days on tarps and shelves.
We did a medium roast on these beans to preserve the bright notes that Peruvian cacao is known for, and the result is herbal and olive notes balanced by soft butterscotch sweetness — a dark chocolate that, as one friend put it, “doesn’t give up the fight.”
