The cacao used in this single-origin chocolate comes from the dark, fertile earth of the Ucayali River valley, a major tributary of the Amazon in eastern Peru. Right out of the bag this cacao delivers aromatics of dried fruit and bright citrus that make the origin both unique in the craft chocolate world and a conversation starter around the charcuterie board. We roast the beans low and slow to preserve these unique notes, and each bite bursts with a juicy bouquet of lemon verbena, tart currant, sweet balsamic, and a subtle tannic bite, layered within a buttery texture imparted by this cacao’s naturally high cocoa butter content.
