This dark chocolate is made from just one ingredient — certified organic cacao beans grown in the central highlands of the Dominican Republic and fresh-roasted in Bozeman. The cacao comes from Öko Caribe, whose Spring 2025 harvest captures the character of classic Dominican cacao: warm, approachable, and full of depth.
At its core, this origin offers familiar notes of s’mores, brown sugar, cherry, and a gentle touch of black pepper. When crafted into a 100% bar, those flavors evolve into something even more layered — toasted hazelnut, warm earth, and subtle wood emerging gradually, before giving way to a clean, buttery brightness that lingers on the palate... but doesn't overstay its welcome.
We roast the Spring 2025 crop to a gentle medium, then grind for four full days. The result is a 100% dark chocolate that surprises with its depth and softness: layers of toasted hazelnut, warm earth, and subtle wood unfold slowly, finishing with a clean, buttery brightness.
If you love high-percentage dark chocolate, this one was made for you — bold, elegant, and deeply satisfying. If darker chocolates aren’t usually your preference, this is one to admire from a distance.
